Chef José González, Executive Chef at The Restaurant & Bar at The Gilded Iguana Surf Hotel, brings a rich and global culinary background to the shores of Costa Rica. Originally on a path to become a lawyer, José found himself captivated by the art of cooking and left law school to pursue a culinary education at Le Cordon Bleu in Paris. There he participated in the prestigious Le Grand Diplôme where he studied both culinary and pastry arts. This ignited a passion that led him to work in Michelin-starred kitchens across France, including Stella Maris and the esteemed Les Prés d’Eugénie under the mentorship of Chef Michel Guérard, a pioneer of ‘nouvelle cuisine.’ During his time in Europe, Chef José developed a deep respect for fresh, high-quality ingredients, particularly during his formative years in the south of France and Basque Country in Spain.
After returning to Costa Rica, Chef José opened his own restaurant, Al Mercat, in San Jose before relocating it to the scenic highlands of Zona de los Santos, where he crafts dishes inspired by local, high-altitude ingredients. His commitment to sustainable, health-conscious cuisine reflects his personal values as an athlete and his cooking style emphasizes fresh, vibrant and balanced flavors.
Since joining The Gilded Iguana, Chef José has reimagined the restaurant’s offerings by balancing his signature dishes with elevated versions of the restaurant’s classic favorites, creating a dynamic menu that caters to a range of guests. Chef José’s vision is for every dish to resonate with originality and the fresh spirit of Costa Rica. The new menu highlights the rich flavors of the region, featuring dishes like a pickled vegetable salad, and a variety of ceviches, and crudos, each designed to offer a light and unique dining experience that captures the essence of coastal life.
